Roasted black pork cheeks and “mantle” with small beans, pointed cabbage and quince jam
Ingredients: 4 black pork cheeks (150 grs. roughly) 800 grs. of pork “mantle” with bone 100 grs. of small beans, cumins powder, to taste 1 pointed cabbage (small) 1 quince (medium) 30 grs. of black pork chorizo 1 onion (medium) 2 garlic bulbs 2 carrots (medium) 2 sticks of celery 1 leek Salt, black pepper, coriander seeds, rosemary, thyme and bay leaves 200 mls. of meat broth Olive oil Dry white wine of good quality 2 dls. of honey vinegar 50 grs. of sugar, an half clove, 4 grains of pepper Szechuan
Preparation: Marinate the cheeks and the “mantle” overnight with salt, black pepper, coriander seeds, rosemary, thyme, bay leaves, a trickle of olive oil and a little bit of dry white wine. Slowly stew the cheeks with the aromatics (garlic, carrot, onion, leeks, celery) and the meat broth until they are tender. Pass the sauce and reduce if necessary. Roast the “mantle” with the bones, so that it does not dry out, during 5 hours at 130ºC. Boil the small beans, that were previously soaked overnight, and, with half of that, make a mash. After this add the rest of the small beans, a bit of cumins powder and season to taste. Stew the cabbage with a bit of chopped onion, garlic, carrot and chorizo, adding some white wine. Peel and cut the quine in 1,5 cms cubes, add sugar, honey vinegar, clove and pepper Szechuan, cook over medium heat until it becomes jam. Dish up and serve.

MODALISBOA | TRANSFUSION
23/09/11 The world changed and we are all part of that change. Today, the tendency is to reduce individual enterprise and take part on a collective, absolute and responsible dynamic ModaLisboa | Transfusion will be the reflex of a network that spreads to action platforms, production values and creative centers. Transfusion is fusion and transference, vision and “transnationality”. Our Country is the world. Our goal is the whole. Fashion is ideology, expression and image. To be outside is to close the eyes, ignore the senses and live the life in a opposite direction. Creative revitalization is urgent and vital, and happens in Pátio da Galé, Lisbon, on October 6th, 7th, 8th and 9th 2001. Four days of fashion interventions over the market with the anticipation of the Spring-Summer 2012's new collections. Rethinking is needed, creation is needed, and sharing is imperative. Designers have gathered on a sustainable platform, recovering the values that make the tradition of Portuguese fashion over the last 20 years. ModaLisboa | Transfusion keeps celebrating two decades of invention and intensity, pushing up, in every edition, the change of ideas and tastes, the circulation of new communication networks, the refreshment of contents and shapes, and the formation of new sources of creation and codes of conduct. Transfusion is a capsule for the 20 years of ModaLisboa, but there is more. We want to keep the leverage effect of an activity that never stops, with a perpetual movement that challenges the conventional, turns entrepreneurship stronger and reveals, to the detail, a new look.

Did you know?
21/09/11 Under a giant canvas awning, Bairro Alto Hotel's “O Terraço” has been renewed, but at the same time kept the colonial chic spirit that made it famous all over the world. With a unique view over the city and the river, and after six years of intensive usage, there was the need for a increased capacity and for a refreshing look.
We kept the oriental themed cement mosaic on the pavement and the black layers on the mansard. Decoration kept the original concept, but now with tissues in grey green tones which sometimes combine with the pavement and the river to create a “perfect symbiosis”, making this idyllic space the perfect spot to enjoy one of the best views in the world. In October, we look at the horizon with nostalgia!

Checkmate - Bairro Alto Hotel
27/08/11 From September 8 to 11, within the Vogue Fashion’s Night Out event, the Museu Nacional do Traje presents an exhibition devoted to the 1920’s at the Bairro Alto Hotel.
The Museu Nacional do Traje and the Bairro Alto Hotel started a partnership aimed at publicizing the museum’s collections at the city centre, as a source of innovation and change, allowing a most close interaction between the hotel and the local community, establishing a indispensable meeting point between fashion, lifestyle and the “movida”.
The Bairro Alto Hotel wants – in a unpretentious way – to interact more closely with the local community and, through this cultural platform, to encourage the respect for the past and its identity.
The Museu Nacional do Traje, despite its remarkable architectural and natural framing, is slightly removed of the central circuits, so it will benefit with the disclosure of its collections. The collaboration between both parties, which will offer an important cultural and social contribution to the approach between new publics, history, past and present, starts in September.

Jazz in August
01/08/11 One of the festivals that follows this rule is Jazz em Agosto, which takes place in Lisbon, the portuguese capital, during August.
Supported by Fundação Gulbenkian, one of the most richly equipped foundations in Europe, Jazz em Agosto takes place outdoors on a time of the year marked by the warm weather. Divided between the first two weekends of the month, the concerts takes place at night, in a stage built in the park that is also the home of Fundação's museum. The result is a magical atmosphere halfway between a forest and a garden. In 2009, trumpet player Dave Douglas thanked the audience for the privilege of playing in such a beautiful place. In addition to the music, in the place of the concerts is also possible to hear the call of the ducks from the lake close to the stage, backed by the fresh wind breezes that comes from the Ocean and shake the branches of the trees.

Bairro Alto Hotel History
31/07/11 Ermida do Alecrim vanished with the Earthquake of 1755, that almost destroyed the entire city. However its name is perpetuated on the beautiful street that goes from the Hotel to Tagus River. On 1770's decade, following the instructions of Lisbon's rebuilding plan of Marquês de Pombal, it was constructed the building with two floors over shops that is now the home of BAIRRO ALTO HOTEL. After the opening of Largo (square) Luís de Camões in 1860, the building was remodelled. Three floors and a suite with dormer windows replaced the former structure. The threshold windows of the suite, zinc framed, were distinguishable over the slated new rooftop, a sign of the french taste of this period that created an image which remains until nowadays. This building was the site of a inn that became known as Hotel de l’Europe, managed on that time by a french lady – Madame Radegonde Gachet –, and after that by Ferdinand Piper and also his widow, between 1845 and 1912.
